Today I stepped away from the conventional burger bun and unleashed the BFG of the mushroom world, the portobello mushroom.
To put it simply I went for the middle class hipsters alternative to McDonald’s . A mushroom burger with homemade guacamole, sweet potato chips, tomatoes and a chicken breast. Which created the above little number!!!!!
Ingredients =
- Coconut oil
- A chicken bosum
- Cayenne pepper
- Italian spices
- Salt
- An avocado
- a third of a large onion chopped
- Yellow pepper chopped
- Sweet potato
- Tomatoes
- x2 portobello mushroom
- Lemon
Recipe.
- Cut the sweet potato up (so they roughly look like chips). Put the chips on a baking tray with a spoon full of coconut oil, and throw the Italian herbs over the sweet potato. For reference I put it at 160 degrees and left it to cook for 25 mins.
- Put a frying pan on heat, add a spoonful of coconut oil and slap the chicken in the pan. Throwing some cayenne pepper onto the bosum and flipping when appropriate.
- Finally when there is 5 mins left on the clock throw the portobello mushroom in the oven with the chips. Then cut the avocado in half. Chuck the chopped onion, avocado, and pepper into a bowl and mash… squeezing the lemon juices over the guacamole.
Then assemble the dish… and feel slightly smug about your creation!
