Spicy Sunday Salmon

I had some salmon in the freezer and the thought of frozen fish for tea filled me with depression. This recipe has all you need and is super healthy!!
Firstly bring two pans to the boil place edamame beans into 1 for 90 seconds then run under cold water I squeezed the beans out of the casing but you can leave in. Add salmon fillet in the other pan for 12 mins or until it’s cooked take out and allow remove skin. In a bowl mix honey, sesame oil, light soy sauce, rocket, red pepper, chilli (remove seeds for less spice), plain peanuts/cashews, chopped spring onions. Lay that mixture on the plate with salmon resting on top. Hey presto Healthy Hack!

1 X 250g Salmon fillet
200g Edamame beans
2 x spring onions diced
2 tsp sesame oil
1 red chilli finely diced (remove seeds for milder option)
1 red pepper de-seeded and sliced
1 tsp Honey
2 handfuls of Rocket
25g of Plain Peanuts/Cashews
